Hi Rebekah, thanks for reaching out. At the moment there is no way to have Add Note to Client Access set to No as the default setting for emails. But I absolutely get why you would want to be able to do this. I've raised this with our product team and I know they will consider it. I'll let you know if/when it gains traction.
In the meantime, you could create a blank email template where this is set as No, and encourage everyone to always use the template so there is no chance they can forget to change this setting when using the email editor.
Not that this helps - but I believe the original logic as to why it was set as Yes in the first place, was the assumption that if you emailed a client, then by default they should be able to see that email anytime they wanted via client access/portal. As time has passed and we have moved away from using email for personal or confidential communications, I can see how having every email sent available in portal could overwhelm a client and they may miss the important stuff.
